Mediterranean Flatbread Pizza

A twist on your traditional pizza flavours!

Prep time: 15 minutes

Cook time: 10 minutes

Total Time: 25 minutes

Yield: 2 Flatbreads

Ingredients:

  • 1 piece of flatbread or naan bread (store bought or home made)

  • 2 Tbsp jalapeño hummus

  • 1-2 Tbsp tzatziki

  • 1/4 - 1/2 cup of chopped cucumber, bell pepper and red onion

  • Ground turkey

  • 1 Tsp Za'atar seasoning (thyme will work too!)

  • 1/4 cup diced Kalamata olives

  • 1/4 cup diced sun-dried tomatoes

  • 1-2 oz crumbled feta cheese

Toppings (optional):

  • Sriracha Hot Sauce

  • Drizzle of chili oil

  • Fresh Parsley and lime juice

  • Olive oil

Directions:

  • Heat oven to 450F

  • Brush flatbread or naan bread with butter or oil

  • Bake in the oven for about 10 minutes or unit your bread starts to slightly golden

While your flatbread bakes, sautée the ground turkey with a little bit of olive oil, Za'atar seasoning (about 1 Tsp), and salt/pepper to taste. Once cooked, set aside.

Prepare your toppings by dicing your cucumbers, bell peppers, red onion, olives, sun-dried tomatoes, and feta cheese. Set aside.

Once your flatbread is golden and warm, take out of the oven and let cool for a couple of minutes.

  • Spread jalapeño hummus onto your flatbread

  • Spread the tzatziki sauce over the hummus

  • Add toppings by evenly spreading over the flatbread (cucumbers, peppers, onion, cooked ground turkey, olives, sun dried tomato, and feta cheese)

  • Place flatbread back into the oven for about 3-5 minutes to warm through (but not long enough to over-warm the cucumbers)!

Add toppings of your choice and enjoy!
