Energy Bites: "Great Balls of Fibre"!

A no-bake recipe to satisfy your sweet + salty craving!

Total Time: 10 minutes

Yield: 16 balls

Ingredients:

  • 1/2 cup creamy peanut butter

  • 1/3 cup honey

  • 2/3 cup sweetened or unsweetened shredded coconut (toasted)

  • 1 cup rolled oats

  • 1/2 cup ground flax seed

  • 1/2 cup chocolate chips (or...free pour!)

Optional:

  • 1 tbsp cocoa powder and/or chia seeds

  • Handful of chopped nuts and/or dried fruit (dates, raisins, dried cranberries)

  • 1 tbsp maple syrup or agave

  • 1 tsp vanilla extract

Toppings (optional):

  • sea salt

  • cinnamon

  • toasted coconut

Directions:

  • Heat a non-stick pan.

  • Toast the shredded coconut for 2-3 minutes or until they start to brown.

  • Combine all ingredients and mix well (make sure the coconut has cooled).

  • Cool mixture in the fridge (~30 minutes).

  • Roll mixture into small balls.

  • Optional: roll balls in a topping of your choice.

  • Refrigerate (for up to 7-10 days) or freeze (for up to 3 months) in a sealed container.
