Energy Bites: "Great Balls of Fibre"!
A no-bake recipe to satisfy your sweet + salty craving!

Total Time: 10 minutes
Yield: 16 balls
Ingredients:
1/2 cup creamy peanut butter
1/3 cup honey
2/3 cup sweetened or unsweetened shredded coconut (toasted)
1 cup rolled oats
1/2 cup ground flax seed
1/2 cup chocolate chips (or...free pour!)
Optional:
1 tbsp cocoa powder and/or chia seeds
Handful of chopped nuts and/or dried fruit (dates, raisins, dried cranberries)
1 tbsp maple syrup or agave
1 tsp vanilla extract
Toppings (optional):
sea salt
cinnamon
toasted coconut
Directions:
Heat a non-stick pan.
Toast the shredded coconut for 2-3 minutes or until they start to brown.
Combine all ingredients and mix well (make sure the coconut has cooled).
Cool mixture in the fridge (~30 minutes).
Roll mixture into small balls.
Optional: roll balls in a topping of your choice.
Refrigerate (for up to 7-10 days) or freeze (for up to 3 months) in a sealed container.
