Mujadara Recipe

A popular Middle Eastern dish that is warm and comforting but also packs a flavour punch!

Total Time: 30 minutes

Yield: 5-6 servings

Traditionally, Mujadara is a vegan dish but we added browned ground beef and chopped kale. There are countless ways to prepare Mujadara but the three base ingredients of lentils, rice and onions, cook together to splendidly to create a perfect harmony of flavour!

Ingredients:

  • 1 lb ground beef

  • 1 can of lentils

  • 1-1.5 cups rice

  • 1 large yellow onion (or 2 shallots)

  • 1 bunch of parsley

  • 1/2 bunch of kale

  • 1 tbsp balsamic vinegar

  • 2 tbsp of demi-glace (or beef broth mixed with corn starch)

  • 1-2 tbsp Turkish Baharat Spice Blend OR Za'atar Seasoning

Optional Toppings:

  • 1/3 cup crumbled feta cheese

  • 1/4 cup toasted pine nuts

  • 1/2 cup pomegranate seeds

  • sautéed onion slices

  • Plain Greek yogurt

Instructions:

  1. Start cooking your ground beef on a non-stick pan after heating a drizzle of olive oil

  2. Dice the onion (or shallots) and then add to ground beef; cook together until browned

  3. While the beef and onions cook, roughly chop the kale leaves and the parsley.

  4. Drain and rinse the canned lentils.

  5. Once the ground beef is cooked, add vinegar and stir until it has evaporated. Then, add the rice, demi-glace and 3 cups of water. Season with spice blend and salt and pepper to taste. Bring to a boil and then lower temperature to a simmer until the rice is cooked.

  6. Once the beef and rice mixture is fully cooked, add the lentils and chopped kale. Stir until warmed through.

  7. Serve your Mujadara and add toppings as desired
