Chinese Green Beans and Ground Turkey Recipe
This simple stir fry dish always hits the spot. With a great balance of lean protein and fiber, your heart and your blood sugars are sure to thank you. We love using ground turkey and green beans with this one, but subbing in any protein, like shrimp, chicken or tofu and swapping in a variety of veggies, like bell peppers or broccoli, makes this dish versatile and just as delicious. We hope it becomes a staple in your kitchen because it sure is in ours!
INGREDIENTS
1 cup brown basmati rice
475 g green beans, ends trimmed
1,500 g package ground turkey
½ onion, diced
4 cloves garlic, crushed
1 Tbsp fresh ginger, chopped
1 tsp sesame oil
Sauce:
1 tsp soy sauce
1 Tbsp chili oil (chili flakes included)
4 Tbsp sweet soy sauce
Diced green onion (optional as garnish)
Sesame seeds (optional for garnish)
INSTRUCTIONS:
Cook rice as per package instructions until fully cooked and soft
In a medium bowl mix together raw ground turkey, 2 garlic cloves, ½ Tbsp ginger, and 1 tsp sesame oil. Let rest while you prep the rest of the ingredients.
Using a steamer, bring water to a boil and steam green beans (about 5 minutes).
In a small bowl whisk together sweet soy, soy sauce, and chili oil to make sauce.
Heat a large Wok over high heat and spray with cooking spray.
Add garlic, onion, and ginger ~ 2 min, stirring frequently.
Add the turkey mixture, breaking up with a wooden spoon so texture is fine and turkey is cooked through.
Make a well with ground turkey in centre of Wok and add green beans. Reduce heat to medium.
Add sauce (as above) to Wok.
Stir all together until beans and turkey are coated in sauce.
To serve top rice with bean & turkey mixture. Add garnishes of green onion and sesame seeds as desired. Enjoy!
